These popsicles are delicious on blissfully long summer days, helping little ones cool down under sunny skies.
Creamy coconut popsicles are sweetened with honey. You could use stevia if you wish, but honey compliments the coconut milk deliciously.
Why You’ll Love Coconut Milk Popsicles
Mixing up a batch of patriotic popsicles is super easy.
Whip out your popsicle molds from the bottom of your cupboard (that's what we call cabinets in Ireland). Any shape mold will work. My version features a traditional popsicle mold.
Making the popsicle mix is as easy as blending up a few simple, wholesome ingredients.
Sprinkles are added to the bottom of the popsicle molds. Coconut milk is then blended together with a bit of honey and vanilla, poured into the molds and frozen. It can't get easier than that.
You can crate a vegan version of these pops if you swap the honey for agave or maple syrup.
Red, white and blue sprinkles are all that are needed to add a patriotic twist to this summer treat. Plus you can even find vegan sprinkles in stores these days.
Ingredients for Red, White and Blue Popsicles
This recipe calls for only four simple ingredients. Here's what you'll need...
Coconut Milk - use a full fat coconut milk. It creates a creamier popsicle.
Vanilla Extract or Vanilla Paste - enhance the flavor of your popsicles with a little vanilla. Be sure to use real vanilla extract, not a fake vanilla essence. Vanilla bean paste also works, and adds some lovely dark vanilla flecks to the popsicles.
Honey - this is used to sweeten these popsicles. You can choose any sweetner you prefer from maple syrup to agave, stevia to cane sugar. The choice is yours.
Colored Sprinkles - these patriotic popsicles use red, white and blue cake sprinkles to decorate them. You can choose to add as much as you like, but I like to just dip the tip of the popsicle in these colorful decorations. You can also adapt these popsicles for any occasion, by using any sprinkle colors you like. Pink sprinkles work great for a girl's birthday party, blue for a boy's party or pastel colors to celebrate spring.

Patriotic Popsicles for 4th of July

Ingredients
- 2 cups coconut milk full-fat
- 1 teaspoon vanilla extract or vanilla bean paste
- 2 tablespoons honey
- 2 tablespoons sprinkles red, white and blue colors
Instructions
- Pour ½ teaspoon sprinkles into the bottom of each popsicle mold.
- Whisk together the coconut milk, vanilla and honey, until smooth. Fill each mold half way with coconut milk and freeze 1½ hours. Keep the remaining coconut milk in a covered container in the refrigerator.
- Remove the popsicles from the freezer. Whisk the reseved coconut milk mixture. Fill each mold with remaining coconut milk and sprinkles. Return to the freezer for 1½ hours. Serve chilled.
