Cute Stacked Witch Cookies With Colorful Icing

Ingredients for Stacked Witch Cookies
Here's what you'll need to make these cookies. You'll find a quick list here. Exact quantities are found in the recipe card at the bottom of this post.
For the Cookies
- butter - softened
- sugar
- egg
- vanilla extract
- all-purpose flour
- salt
For the Royal Icing
- warm water
- meringue powder
- powdered sugar
- Karo syrup
- Food coloring gels - black, orange, purple and lime green

- 6 Pastry or Piping Bags
- 5 Decorating Tip Size 4
- 1 Medium Round Tip Cake Decorating Tip Size 20
- 6 Coupler Set for Icing
- 1 Stacked Witch Cookie Cutter
Directions for Stacked Witch Sugar Cookies
Firstly, let's make the cookie dough.
This is a butter sugar cookie mix with vanilla extract for extra rich flavoring.
Cream the butter, sugar and egg in the bowl of a stand mixer. Use the whisk attachment to add as much air as possible to the blend.
Sift the flour and salt into a separate bowl. Alternatively you can mix it with a balloon whisk instead of sifting it.
Add the vanilla extract to the butter mixture and blend well together.
Gradually add the flour to the butter mixture and mix on low speed until blended and a dough forms.
Place a large piece of parchment paper on the kitchen counter, and sprinkle with flour.
Place half of the cookie dough at a time on the parchment paper. Use a floured rolling pin to roll out the dough to a thickness of about half an inch.
Use a stacked witch cookie cutter to cut out separate cookie pieces. Place each piece on a cookie sheet lined with parchment paper.
Repeat with the second half of the cookie dough.
Gather up the dough scraps and re roll to make more cookies.
Bake at 350 degrees for 10 to 12 minutes, or until the cookies begin to turn golden brown around the edges.
Remove from the oven to a wire rack, and cool completely.
Creamy Royal Icing
To make the royal icing place the warm water and meringue powder in the bowl of a stand mixer. Blend together with the whisk attachment, and slowly pour in the Karo syrup.
Add the powdered sugar, about 2 cups at a time, and mix on low, until all the Powdered sugar has been added.
Intermittently, stop the mixer and scrape down the sides of the mixing bowl with a flexible rubber spatula as needed. Blend the icing again until it is smooth and creamy.
Separate the icing into five equal portions in five different bowls. There should be about half a cup of icing in each bowl.
Add about 5 drops of each food coloring gel to four of the bowls. Mix well to blend the color throughout the icing and to achieve uniform coloring.
Leave the fifth bowl of royal icing without any coloring. This will form the witch's white tights on the leg cookie pieces.
Place small icing tips in 5 pastry or piping bags.
Add each color of icing to each of the five pastry bags. You'll have five bags with small decorating tips, one green, one purple, one orange and one black, and one white.
Place the large tip in another pastry bag and add about quarter of a cup of lime green icing.
This will be used to create the bubbling cauldron effect. I encourage you to watch the video linked to this post, to see the icing process in full detail.
Pipe icing around the outside of each of the cookies, and then fill in the center in the desired color.
Add sprinkles to the top of the witch cauldron cookie.
Allow about 1 hour for the icing to completely set.
Then all you have to do is serve and enjoy these cookies.

Ingredients
For the Cookies
- 1 cup butter softened
- 1 cup sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2½ cups flour
- ½ teapsoon salt
For the Royal Icing
- ¾ cups water warm
- ⅓ cup meringue powder
- 7 cups powdered sugar
- 1½ tablespoons Karo syrup
- 5 drops black food coloring gel
- 5 drops orange food coloring gel
- 5 drops purple food coloring gel
- 5 drops lime green food coloring gel
Instructions
Bake the Cookies
- In the mixing bowl of a stand mixer, add the butter, sugar, and egg, and blend with the whisk attachment until smooth, and creamy. Add the vanilla, and mix until blended.
- In a separate bowl, add the flour, and salt, and mix well to blend. Add the Flour mixture to the mixing bowl, and mix until blended, and smooth.
- Place a large piece of Parchment paper on the kitchen counter, and sprinkle with flour. Place half of the cookie dough on the parchment paper, and with a floured rolling pin, roll the dough to ½ inch thickness.
- Cut out each piece of the stacked witch with the cookie cutter, and place on a parchment paper lined cookie sheet. Bake at 350° F for 10 to 12 minutes, or until cookies begin to turn golden brown around the edges. Remove from the oven to a wire rack, and cool completely.
For the Royal Icing
- In the mixing bowl of a stand mixer, place the warm water, meringue powder, and Karo syrup, and blend with the whisk attachment until completely blended and smooth.
- Add the powdered sugar, about 2 cups at a time, and mix on low, until all the powdered sugar has been added. Scrape down the sides of the mixing bowl as needed, and blend until the Icing is smooth and creamy.
- Place about ½ cup of the icing in each of 5 bowls, and leave the remaining icing in the mixing bowl. In one of the bowls, add several drops of black food coloring gel, until you have the desired color of Icing. In the other bowl, add a couple drops of purple food coloring gel, and stir well. In the other two bowls, add lime green gel color and orange. Leave the rest of the icing white, around ½ cup for the witch's tights.
Decorate the Cookies
- Place the small icing tips in 5 bags, green, purple, orange, lime green, and white. Place the large tip in the pastry bag and add ½ cup of lime green icing. Place the icing in a plastic Pastry bag. You'll have five bags, one green, one purple, one orange and one Black, and one white.
- Pipe the icing around the outside of the cookies, and then fill in the center. Add sprinkles of choice. Allow about 1 hour for Icing to completely set. Serve, and Enjoy!
