Happy Shrove Tuesday to you and your family. It is one of my most loved days because it reminds me of my mother making lashings of pancakes for not only my 10 sisters and brothers but also for our friends who always shared most every meal at our house. There was always tea and toast on an ordinary day but on Shrove Tuesday we had pancakes with butter and jam. Delicious!

p.s. I continue the tradition of always inviting my children's friends and my grandchildren's friends for tea and toast, no matter who or where they come from no one has ever said no.

I too loved Pancake Tuesday when I was a little girl in Dublin. My mom would make so many pancakes too, but we used lemon and sugar on ours. Your mother sounds like an amazing woman. Tea and toast with butter and jam is such an Irish thing, and the more the merrier was always the motto in our house. I remember one of our neighbors when I was growing up. She would make an apple tart on a massive oval serving platter to feed all the kids on the road. We loved her apple tart especailly when she poured hot custard over it. Irish mammies are the best.

Isn't calling it an Irish Car Bomb not a good thing, I thought? Similar to a boilermaker, Dublin Drop or an Irish Slammer but I was always told not to call it this or that to ask for a Black and Tan was in poor taste.

Hi Bernadette - An Irish Car Bomb may not be the best name alright. Thanks for pointing that out. But I'm not going to worry about being too politically correct around here. I could tie myself in knots trying to keep everything perfect and that can be difficult in light of Ireland's long history. An Irish Slammer, an Irish Bomb Shot (just as bad), or a Dublin Drop are other names for the cocktail this cupcake recipe is based on. The creator of the recipe came up with the name, and I'm not too concerned about sticking with it. It's only a cupcake after all. Fingers crossed we can all take things with a grain of salt and see the humor in this little corner of the internet. I still call a Black and Tan, a Black and Tan. Is it in poor taste because of racial connotations or that we wish to forget what happened during the times fo the Black and Tans in Ireland? I'm not quite certain these days. Anyway, thanks for dropping by and adding to our discussion this week. It's always lovely to get input from readers.

Thanks for your thoughts, Mairead. Always like to hear mainland Irish opinions as it can be tricky; I've seen some take offense and other say the same, it's just a name of a drink/food item.
I do know that Guinness in baked good and in particular with chocolate is a very good combination so the cakes sound terrific.
